Garlic-Parmesan Cauliflower Bites
Cut a head of cauliflower into bite-size pieces, and dredge in ½ cup of all-purpose flour. Beat 2 eggs, and dip coated cauliflower pieces in the eggs until they’re completely covered. Pour a mixture of 1 cup panko bread crumbs, ½ cup grated parmesan cheese, and ½ tablespoon garlic powder over cauliflower. Fry in heated vegetable oil until golden brown.
Cut a head of cauliflower into smaller pieces, and place pieces into a food processor. Pulse until cauliflower is the texture of rice. For a Mexican version, add bell peppers, onions, chicken broth, tomato sauce, cumin, salt and pepper and sauté in a pan. For an Asian flavour, add sesame oil, carrots, bok choy, ginger, broccoli and scrambled egg.
Cauliflower Mashed “Potatoes”
Potatoes have a high glycemic index which is problematic for people trying to regulate their blood glucose levels. Luckily, cauliflower easily takes the place of potatoes in this recipe. Cut up a head of cauliflower, and steam florets until tender. Place steamed florets, 1/3 cup half and the half, 1 teaspoon olive oil, 2 tablespoons butter, salt and pepper into a food processor, and blend until creamy.
Cauliflower “Potato” Salad
Similar to mashed potatoes, the potatoes in this recipe can be easily replaced by cauliflower. Cut up a head of cauliflower, steam florets until tender, and allow to cool. Add mayo, diced pickles, red onions, chopped boiled eggs, dill, salt and pepper.
