Banana And Sultana Bread – Gluten Free



  • 1 ripe banana weighing 200g with the skin on
  • 2 teaspoons of lemon juice
  • 4 tablespoons of sunflower oil
  • Half a teaspoon of salt
  • 2 eggs
  • 350ml cold water
  • 500g wheat- and gluten-free bread flour with added natural gum
  • 2 tablespoons fast-action dried yeast
  • 80g sultanas


  • Please check the instruction manual of your bread machine with regards to the order the ingredients should be added. The order below will suit most bread machines but if it doesn’t, simply add then to the bread pan in the order specified.
  • Peel and slice the banana then mash it with the lemon juice.
  • Remove the bread pan from the bread making machine and fit the kneader blade. Add the banana and lemon juice, oil, salt, eggs (beaten) and water. Add the flour, ensuring that the water is completely covered. Add the sugar to one corner of the bread making pan. Make a small indent in the centre of the flour and add the yeast. Sprinkle the sultanas over the top.
  • Place the bread pan back into the bread making machine and set the program for a basic l and a half pound loaf with medium crust – press start.
  • At the end of the bread machine programme, carefully remove the bread pan from the bread machine using gloves – then remove the bread and place on a wire rack to cool.
