Fresh Cherry Cake


Delicious and perfect for a picnic!


  • 150g / 5.3oz self-raising flour
  • 6 eggs
  • 6 tablespoons of sugar
  • 1 teaspoon vanilla extract
  • 400g / 14.1oz juicy, ripe cherries
  • Icing sugar, for dusting


Step 1

Wash the sour cherries and remove the pits. Separate the eggs. beat the yolks with a tablespoon of sugar to turn white. Then egg whites are beaten to create foam and gradually add sugar until you get a meringue.

Step 2

Over the egg whites put the obtained composition from yolks and vanilla extract. Mix until homogeneous, then slowly add flour, sprinkled and slowly mix.

Step 3

In a tray lined with baking paper pour the composition and put the sour cherries from place to place.

Step 4

Put the pan in the preheated oven for approx. 30 min at 180°C/350F/gas4 until it turns to gold. Once out of the oven sprinkle it with powdered sugar.
