Nougat is an aerated candy made from whipped egg whites and a boiled sugar syrup, much like marshmallows. If you go to Istambul (Turkey), don’t ignore them because they are very delicious and you will find them in various range from traditional
- 150g / 5.3oz peeled almonds or pistachios
- 2 eggs
- 2 ½ cups sugar
- half cup of water
- 300g / 10.6oz glucose
- 1 teaspoon vanilla extract
Put the almonds in the oven at 180°C / 350F / gas 4 for 10 minutes until golden brown (be careful not to burn them).
Meanwhile (while the almonds are in the oven) make syrup from sugar, glucose dipped slightly to become liquid and water. Boil the ingredients until the bubbles start then let it Simmer gently until the syrup begins to color very, very little to pale yellow.
Take the saucepan from the stove and place it a few seconds on a cold surface or in the sink with a little water to stop the simmering so it won’t caramelize. Whisk the eggs until they become foamy and add the sugar syrup over them. We gradually add syrup while stirring constantly until evenly incorporated. After that add vanilla extract, almonds or pistachios (which you have made).
Mix until it’s uniform. Pour into pans (or pan) lined with baking paper and put it cold for approx. 6 hours.
